Chili with Chorizo and Black Beans

Wanting something to just slow cook while I do what needs to be done today, I decided to make some chili. Check out this recipe with ground beef, chorizo and black beans. 2015-04-15 14.59.11

1 small package black beans soaked overnight in cold water

1 lb lean ground beef

2/3 lb chorizo sausage (I would have used the full pound but made a sandwich with the other 1/3 lb)

1 large green bell pepper, diced

1 large yellow onion, diced

2 jalapenos, seeded, diced (leave the seeds for a hotter chili)

1 28 oz can crushed tomatoes

1 quart beef stock

2 cups water

1 tbsp garlic powder

1/2 tsp crushed red pepper

2 tbsp chili powder

2 tsp onion powder

1/2 tsp cayenne pepper

2 tsp ground cumin

1 tsp ground coriander

1 tbsp paprika

1 tbsp kosher salt

2 tsp fresh ground black pepper

1 tbsp corn meal

1/4 cup chopped cilantro

-Brown ground beef and chorizo, do not drain

-Add all other ingredients except corn meal and cilantro

-Bring to boil, reduce heat to medium low and simmer for 4 hours, reducing by about half,stirring when you can  🙂

-Add corn meal and stir, continue cooking for 1 hour

-Remove from heat, add cilantro and stir well

Tah-dah. Serve with whatever toppings you like. I used fresh diced onion, cilantro, sour cream, Tapatio and Mexican cheese blend. Enjoy!2015-04-15 20.12.01
