Beef, Lamb and Bacon Meatloaf Muffins

I have not posted here in a while so I thought well, I am making meatloaf so here it is. πŸ™‚

Meatloaf is one of those things that you can put almost anything into and it will taste good. For this one I used a pound each of 80/20 ground beef and ground lamb, about 1/2 pound of bacon, a big handful of cheddar cheese, some sauteed onions and a mixture of 1/2 cup milk, 2 packages of maple and brown sugar oatmeal (I will be using brown sugar in the glaze too). and 2 eggs seasoned with garlic, oregano, a little curry powder, salt and pepper.2016-01-13 15.07.012016-01-13 15.06.40

Once mixed, I wanted to make some individual loafs so I used my muffin pan sprayed with non-stick cooking spray and packed the meat mixture into the pan. I had some leftover and just cooked that in a separate pan.2016-01-13 15.20.25

For the glaze I used 1/2 cup ketchup, 1/2 cup brown sugar (told ya), about a teaspoon of yellow mustard and about a tablespoon of steak sauce. Now normally I would make this sauce spicy but I was feeding someone who does not like the heat so I can add hot sauce to mine I suppose. Mix it all up and spoon on top of your muffins.2016-01-13 15.21.252016-01-13 15.24.58

I baked these at 350 degrees until they reached an internal temperature of 155 degrees, about 1/2 an hour, then let rest for about 10 minutes.2016-01-13 18.26.56

Man, were these little things good! Just what I was wanting in a meatloaf. They were super tender, they did not fall apart and they were a touch of sweet and salty which is a wonderful combination. I served them with roasted carrots with olive oil, salt and pepper and just some Rice-a-Roni which I made with water that I deglazed my bacon cooking pan with because…BACON…it makes everything better. πŸ™‚2016-01-13 18.33.45
