Bacon Cheeseburger Stuffed Onion Rings

I have been seeing a cool recipe floating around for Cheeseburger Onion Ring Bites and thought they sounded good. I decided I was going to do it my way with bacon, pepperoncinis and garlic. I mixed all of that with the pickles and ground beef.2016-03-12 18.34.34

I sliced an onion into 1 inch rings and soaked them in buttermilk until I was ready to fill them. I filled them about half way with the beef mixture and placed in chunks of habanero cheese.2016-03-12 18.46.43

They were then topped and filled with the beef mixture.2016-03-12 18.56.11

Time to bread these monsters. I seasoned both sides with a little S&P then I used flour that I seasoned with just some salt and pepper, an egg wash with eggs and buttermilk, salt and pepper and seasoned breadcrumbs since I did not have any panko.2016-03-12 18.19.032016-03-12 19.19.26

I pan fried these in a little vegetable oil heated over medium heat for about 3-4 minutes per side until nicely browned. Just a tiny bit of the breading came off from the onion ring which I can attribute to using tongs to flip them since they were so HUGE and heavy! 2016-03-12 20.00.51

These were pretty fantastic and got great reviews from those who ate them. As you can see mine were not “bites”. I should have put them on a nice toasted hamburger bun…they were that big! 2016-03-12 20.01.27

They stayed very juicy inside and crispy on the outside with a nice amount of bacon, peppers and pickles and that cheese….oh my…it is SPICY!
