Sweet and Spicy Bacon Jam

Hard to believe that I have never had bacon jam before. I have seen a few recipes here and there and they are super simple. I decided it was time to create my own loosely based on the recipes I have seen. I started out by browning 2 pounds of bacon slowly over medium low heat.2016-06-06 15.40.30

Once crispy, I removed the bits and set aside, reserving the wonderful bacon fat for other uses.2016-06-06 16.53.36

I left about a tablespoon of fat in the pan and added 2 large onions diced, along with 1 huge diced jalapeno (seeds and all) and 4 cloves of minced garlic.2016-06-06 16.52.51

Cook over medium heat until the onions are just translucent and soft.2016-06-06 17.05.04

Time to put everything in now. I used about a cup of espresso, 1/2 cup brown sugar, 1/4 cup white vinegar, 1/4 cup balsamic vinegar , 1/4 cup maple syrup, and about 2 teaspoons of vanilla and of course the bacon.2016-06-06 17.02.48

Stir it all together and bring to a boil.2016-06-06 17.08.18

Reduce heat and simmer until thick and most of the liquid is gone.2016-06-06 18.10.37

I used my immersion blender to puree the mixture into a more jam-like consistency. I can’t believe I have never had this wonderful condiment. It is everything you imagine. Sweet, sour, spicy, salty, bacon-y goodness! I can’t wait to stuff some burgers with this. It will be nice spread on toast with a couple of scrambled eggs.
