Hard to believe that I have never had bacon jam before. I have seen a few recipes here and there and they are super simple. I decided it was time to create my own loosely based on the recipes I have seen. I started out by browning 2 pounds of bacon slowly over medium low heat.
Time to put everything in now. I used about a cup of espresso, 1/2 cup brown sugar, 1/4 cup white vinegar, 1/4 cup balsamic vinegar , 1/4 cup maple syrup, and about 2 teaspoons of vanilla and of course the bacon.
I used my immersion blender to puree the mixture into a more jam-like consistency. I can’t believe I have never had this wonderful condiment. It is everything you imagine. Sweet, sour, spicy, salty, bacon-y goodness! I can’t wait to stuff some burgers with this. It will be nice spread on toast with a couple of scrambled eggs. I think it may become part of a chicken dish as well. Thanks for stopping and I do hope you try making this if you have never had it…or even if you have. 🙂
